Delicious Beef Chili

  • olive oil (about 2 tablespoons)
  • 1 yellow onion, diced
  • 2 cloves garlic
  • 1 pound ground beef
  • 1 packet chili seasoning
  • 1 28-ounce can diced tomatoes
  • 1 jar medium tomato salsa
  • 1 15-ounce can red kidney beans, drained and rinsed
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper

Heat the olive oil in a pot over medium heat. Add the onion and garlic and cook until tender and translucent, 5 to 6 minutes. Add the beef and cook, using a wooden spoon to break it up as it browns, about 5 minutes. Drain some of the liquid from sautéing the beef. Mix in the chili seasoning and 1/4 cup water. Cook for about 3 minutes. Add the tomatoes, salsa, beans, salt and pepper. Bring to a simmer, reduce the heat to low, cover and cook until reduced slightly and heated through, about 20 minutes. Serve with sour cream, cheese, cornbread and/or tortilla chips.

Serve with a cold beer, a Spanish rioja, German dry Riesling, Rose wine or a Chenin Blanc!

Seasonal Drink: Smores Cocktail


  • 4 ounces hot cocoa
  • 1 ounce chocolate liqueur
  • 1 ounce marshmallow vodka
  • 1 ounce creme de cacao
  • marshmallows
  • graham cracker crumbs
  • chocolate-dipped graham cracker

1: Add liquors to hot cocoa in a mug. Stir to combine.
2: Add marshmallows to top of mug and brown with a culinary torch or under the broiler of your oven. To broil, position the rack so the top of the marshmallows are 2-3 inches from the heat source. Watch the marshmallows closely as they can go quickly from browned to burnt.
3: To serve, sprinkle the top with graham cracker crumbs and a graham cracker dipped in melted chocolate.
